Cochineal extract is derived from a several species of insects.
The extract is obtained by exposing insects to heat, steam or hot water, drying their bodies, and subsequently boiling the powedered bodies in ammonia.
In the process borax, stannous chloride and alum are also used.
The resulting purified dye is one of the most commonly used additives for fruit yoghurts, smoothies, soft drinks, alcoholic beverages and confectionery.
