Pour ce faire, XXX effectue la traçabilité de l’ensemble des dispositifs qu’elle fait fabriquer et/ou assembler en son nom propre grâce à l’attribution d’un numéro de traçabilité, matérialisé par un numéro de gravure et d’identification du produit qui est porté sur l’étiquetage des dispositifs.

Product/component Number
The literal translation is of course product reference. Normally, we give a product number to easily identify the products used by a product number. As I see, the product is a medical device, involving many components, the référence produit can be a component number for eay identification of the component used.

Seems like an odd way to express it, but it's clear it is referring to any specific product, i.e. each individual product within the range.
I think the use of 'each' helps convey the idea more clearly in FR.
Otherwise, just use 'product', which would probably be more natural in EN, though arguably slightly under-translates the source term.
